My mostly healthy meals on a weekend day

Food, food and more food. But first, how’s your week going, my friends? We’re doing well over here. One week from tomorrow, Dave and I will be heading off on our first-ever vacation to Hawaii, and the anticipation is high. I definitely feel like I have a lot to get done ahead of time, but am super excited as well.

As far as A Lady Goes West is concerned, I’m going to have a few posts ready for you while I’m away, but am planning to mostly check out over the course of the trip. That being said, you have to promise not to forget about me. (I hope Rudy doesn’t forget about me either!) But we have a few days to prepare for that. So for now, let’s just skim through some food pictures and call it a day? Sound good?

This week’s “What I Ate Wednesday” recap

On Wednesdays, I take a minute to show you one full day of my mostly healthy meals in pictures. It’s a chance to see real food in action, so I hope you enjoy it. But remember, what I eat works for me, and it may not work for you. I have no allergies, no dietary restrictions, and I certainly don’t avoid any food groups, so you’ll see a little bit of everything.

What I Ate Wednesday via A Lady Goes

Today, I’m sharing everything that I ate on Sunday. While normally Sunday is a rest day for me, because I had taken Saturday off of working out, I opted to jump into a BODYPUMP class in the morning. Here’s how the day looked with food …

Breakfast at 7:45 a.m.

What I Ate Wednesday - small breakfast on SundayNot my usual prepped ahead-of-time bowl of overnight oats or even one of my usual cottage-cheese parfaits. Because I decided at the last-minute to get ready and head out to a workout class, I had to throw together a small breakfast quickly. I opted for a Quest Bar (totally delicious impulse buy from the day before), a banana and some hot green tea, sweetened with cashew milk and stevia. It did the trick!

Post-workout protein at 10 a.m.

What I Ate Wednesday - protein shake on SundayA plant-based recovery shake with 26 grams of protein was just what I needed when I came home from pumping. (Always consumed within one hour of my workout!) As usual, guess who was at my feet as I downed my slightly frozen drink? I usually prefer whey protein straight after a workout, but this beverage was armed and ready for me. Good stuff. Thanks for all the products, Vega, because I’m enjoying it all.

Lunch at Noon

What I Ate Wednesday - potato and egg lunchAfter several months of consuming at least one sweet potato a day, I recently took some time off the orange tasty carbs. Well I’m back on the baked-sweet-potato train this week. On this day, I had a baked tater, topped with cinnamon, along with two slightly-runny fried eggs. I mixed it all into one pile of mush, and it was glorious. And I’ve had that lunch every day this week so far.

Afternoon snack at 5 p.m.

What I Ate Wednesday - apples and nuts for a snackApples and almonds, i.e. the perfect snack. I enjoyed this little meal after Dave and I got home from an afternoon outing with Rudy, and it sure hit the spot. Apples are one of the few pieces of produce that I always buy organic, even though they are a bit more expensive, because I always eat the skin and want that part to be untouched by pesticides. My latest batch of Fuji apples are not only organic, but also taste just right.

Dinner at 8 p.m.

What I Ate Wednesday - salmon dinnerI could eat this for dinner every single night. Grilled salmon, a mixed kale salad (pre-packaged and from Safeway) and some grilled asparagus. I mean … totally delicious. Dave has gotten so good at grilling fish, and this salmon was perfect, topped with just a little fresh-squeezed lemon. Also shown is just one of the glasses of Chardonnay I enjoyed that night at home on the couch, because Sunday night just calls for wine. Am I right?

Dessert at 9 p.m.

What I Ate Wednesday - small dessertI actually don’t have dessert (or wine) very often during the week, but I always have room for something sweet (and wine) on the weekends, including Sundays. I had this high-protein ProYo frozen yogurt bar, a selection of coconut-covered and caramel-covered dates and some vanilla cashew milk, and it was just what I needed to end the day of eating. And yes, those dates are purchased from the produce department with all the fixings included.

That was it for my eats that day. Plenty of good stuff, I’d say. Alright friends, have a lovely Wednesday! Eat up!

  1. My meal that I could have every night is scallops, rice and a good salad, along with a glass of Chardonnay. ?

    BTW, how come you don’t allow yourself to drink wine during the week? I have a glass every evening and always enjoy it when making dinner. ( I don’t have dessert every night though ?

    1. Hi Mo! I like scallops, but have never made them at home. But your meal sounds delish! As far as wine goes, believe it or not, I usually don’t want it when I get home late and am showering and trying to get settled for the night. So I just save it for more leisure evenings on the weekends. However, if I was craving it, I would certainly pour a glass any time. 🙂 Glad you get your nightly night fix while cooking!!

  2. Once again, I feel like I am missing out on the salmon train. Maybe one of these days I’ll hop on it! ProYo? That looks very intriguing and delicious. Also, there’s nothing wrong with a glass of wine on the weekends OR weekdays 😉 Happy Wednesday!

    1. Hi Heather! Salmon is just so darn healthy and tasty, but I know it’s not for everyone. No big deal. Dave has been eating tilapia and cod — because those are much more mild fish. ProYo is totally delish – but hard to find in stores. If you see it, jump on it! Happy Wednesday!

  3. A meal I could eat every night is a toss up between cedar-plank salmon, sweet potato, asparagus and chicken on the bbq, roasted potatoes and a veggie (green beans, asparagus, or a variety of roasted veggies).

    I love bbq season and wished I lived somewhere that I could bbq year-round. Since I know I only have a few more months of it I’m grilling as many meals as possible!!

    Enjoy your Wednesday 🙂 I’m super jealous that you’re going to Hawaii soon. We went there for our honeymoon and didn’t want to leave. We hope to go there for our anniversary every 5 years … fingers crossed we can manage that.

    1. Hi Catherine! Oh wow, all of your foods you suggest (minus the green beans) sound delish to me! We have been using our grill a lot and I think it will be used year-round, because the winters aren’t too cold here. I can see why you need to take advantage of yours now! As far as Hawaii — we CANNOT wait. I’ve wanted to go for FOREVER. And how cool you have plans to return every five years!! 🙂 (By the way, I’m using Discover Hawaii Tours upon your recommendation!)

        I can’t wait for your recap since we only managed to get to Oahu on our last visit. Next time we want to go for longer and travel to more than one island.

  4. Ohh yes that dinner looks great. I absolutely love asparagus, and salmon might be my favorite protein ever. I think I could eat sushi every day. There’s so many varieties that I could never get tired!! Thanks for sharing your eats, and I hope the next week flies by for you!

    1. I could eat sushi every day too, Gretchen. But that would get expensive heeheehe. Amen on salmon as my favorite protein. I try to eat it at least once a week. Happy eating to you, lady! 🙂

  5. That Pro-Yo looks good! Love the Quest bars, just so pricey! I picked up some Vega powder a few weeks ago, and I wasn’t too impressed with the taste… but it goes well in stuff, just a fan of it solo with water or almond milk. I would be a happy camper with a giant chicken & veggie stir-fry every night, or a big plate of basil chicken from my favorite Vietnamese place 🙂

    1. Hi Jessie, I definitely like Vega better mixed with milk or in a smoothie or other concoction. But the ingredients, packaging and company are awesome all-around! 🙂 Basil chicken sounds pretty tasty too. I like basil with anything. Especially martinis. Have you had a basil martini? hhehe

    1. Me too, Heather! Right now I’m only teaching it regularly once-a-week, whereas I used to teach it three times-a-week, so it’s good for me to to go experience it as a student! Happy Wednesday! 🙂

  6. Yumm I love your food pictures so much! The quest s’mores flavor is my favorite. I too have taken a break from sweet potatoes and hope to get back to them soon- your egg picture has me craving them big time.!

  7. I am going to have to try the sweet potato and egg combo. The last time I made sweet potatoes at my house it did not go well… The hubby hated them. He thought they were too sweet and like dessert… Guess I will just have to eat them alone..,

  8. I need that pro-yo in my life! Well, maybe once I’m no longer in Italy and eating my bodyweight in gelato… haha

    Have fun in Hawaii! I went there 4.5 years ago. All I remember was having amazing desserts and cocktails.

  9. Those caramel covered dates though… I feel like I could get crazy with those! I don’t know why but I love breakfast for dinner so I’m pretty sure I could do eggs or pancakes or waffles every single night of the week and be totally happy!

  10. I haven’t had a Quest bar in far too long. They are definitely one of my favorite protein bars, but they are a little pricey so they don’t happen as frequently as I’d like. That sweet potato + egg combo is so good! Now I’m craving it for lunch and may just have to make it happen. Your dinner looks delish too!! I could eat that combo every day myself!

  11. I feel like I could a roasted veggie salad everyday and not get sick of it! Your meals, though look delicious! I love the egg/sweet potato combo! I totally would have mixed it all together too! I hope you have a great rest of your day!

  12. I could eat chicken, veggies, and rice every night! Similar to your dinner, I have never tried grilling Salmon though. And your kale salad always looks so good, I am going to look for it at Safeway this week. How is the cashew milk? I have tried cashew butter and enjoy it, but haven’t tried the milk yet. Hope your week is going well!

    1. Hi Patricia! I like the flavored cashew milk the best – so I buy the vanilla kind. It’s good and definitely tastes like cashews heheh! Go for it! 🙂 Happy Wednesday!

  13. Delicious day of eats- your lunch and dinner are both meals I could eat daily without getting bored. Another one to add to the list is baked sweet potato with greens, grilled chicken and hummus! Happy Wednesday!
