It feels like a great day to look at pictures of healthy food, don’t you think? Hello, my friends! I hope you’re having a wonderful week. Things have been more than busy with me. My new schedule working regular “day-job” hours is certainly an adjustment, although things are definitely going well so far.

Other than Monday nights, when I teach an evening BODYATTACK class, I’ve mostly transitioned to doing my own workouts in the early mornings, and they’ve been short and efficient. In addition to that, I’ve gotten back into meal-prepping and packing up my food to get me through a long day. And because my mornings are rushed, I’ve also been picking out my outfits the night before, laying out my gym clothes and setting an early alarm. It’s been more than two years since I’ve been in this type of routine, and I’m slowly remembering how it all goes down. But really, we’re here to talk about food, so let’s get into a “What I Ate Wednesday” post …

This week’s “What I Ate Wednesday” recap

Whether you use these posts as inspiration or entertainment, almost every week, I like to share a full day of all of my meals to give you a glimpse into what’s on my plate. It’s nothing more than an opportunity for you curious eaters to see some real food in action.

What I Ate Wednesday via A Lady Goes

I’m sharing a look at all of my meals from this past Sunday, which was a healthy weekend day, following up on a Saturday featuring a big dinner out, extra wine and dessert. (Because you just can’t eat at chain restaurants every day, can you?)

Breakfast at 8:30 a.m.

Rice cake breakfast by A Lady Goes West

This breakfast is a slightly different one for me. You see two brown rice cakes, covered in crunchy almond butter, a banana and some chia seeds, which I enjoyed with a mug of hot green tea, sweetened with almond milk and stevia. While this was totally delicious and filled me up, it was lacking my usual morning dose of protein, with only a little bit coming from the almond butter. Good news is that it only had to power me through a short yoga class, and I was home to eat again very soon.

What a beautiful sight! This combination is something that will never get old in my book. A baked sweet potato, brussels sprouts roasted in coconut oil, half of an avocado and two runny eggs. Every bite I took had a little bit of everything, and it was delish.

Hot beverage at 3 p.m.   

Afternoon green tea by A Lady Goes West I’ve sung the praises of matcha green tea lattes many times, but that’s not what you see here. Lately, I’ve been getting regular green tea lattes with steamed coconut milk. You have to pay a little bit extra for coconut milk at Starbucks, and I think it’s worth it. Dave and I stopped to get a little pick-me-up before an afternoon shopping trip, and I opted for a venti on this day. Good stuff.

Afternoon snack at 5 p.m.

Fage Greek yogurt snack via A Lady Goes West

I used to think that plain Greek yogurt was boring. But when you buy the two percent or full-fat variety, you can’t help but enjoy the thick texture and creamy taste. And just one little tub is plenty filling to hold you over until your next meal. It’s a popular snack around here.

Dinner at 8 p.m.

Steak and potato dinner by A Lady Goes West This dinner was a joint effort by Dave and by me. He grilled the steaks, and I roasted the veggies and potatoes. Dave received a shipment of Omaha Steaks for Christmas, and both the steak and seasoned potatoes came in a frozen box, just waiting for the perfect night to be cooked up. We were quite impressed.

Dessert at 9 p.m.

Dates and milk for dessert by A Lady Goes West

Because a day of eating is never over unless there’s some sweetness … I present to you dates galore! Two chocolate-covered orange dates, two coconut-covered dates and some vanilla almond milk, enjoyed while Dave and I watched old episodes of Dexter on Netflix. And that was it in the eats department.   1. Yum orange dates sound delicious! And working regular day job hours definitely means you need to pack a lot of food with you. I also do the same thing and have my workout clothes and outfit ready to go the night before, saves so much time in the early morning. I just made a taco dip last Saturday and used the plain greek yogurt instead of sour cream, delicious!

    1. Hi Patricia! YES to planning ahead the night before. It’s a must to be successful. And I love using Greek yogurt in dip — such a healthy change. Yummy!! Have a great day!

    1. I poopooed rice cakes for a long time, but then started buying them again a few months ago. They are totally delicious, cheap, healthy and can be the base for anything! 🙂 Happy Wednesday, Susie!

  2. I just started the whole 30 this week and have been loving dates, larabars, chia pudding, so many things I hadn’t tried before because I was so stuck in my ways! But totally see why you love those dessert dates, they are so good on their own!

  5. Your eats always look so nutritious and colorful. The best thing I’ve eaten this week was probably the Chocolate S’more Cupcake I had yesterday. 🙂 The lettuce wraps my mom made were also super delicious. They were ‘PF Chang’s Copycat wraps.’

  6. For some reason, I find today’s meals easier to re-create than most. I’m pumped to try these out this weekend!

    Also, an idea for a post with your new gig is “A Day in the Life” or something of the sort… highlighting those quick, efficient workouts you mention. Just a thought.

    I definitely highlight my work day workouts (example, one if on the blog today, ha), but I always find it interesting to see how others balance work life and fitness. 🙂

  7. That lunch combo will just never get old. Mmmm my four favorite things. You always make a mug of almond milk look ridiculously appealing. I really need to start washing down my nightly chocolate the same way.

  8. Ever since I became a Les Mills instructor which was almost 6 years ago, I have been preparing my gym stuff the night before. My husband calls me a Sherpa because my gym bag is so bag and I’m often carrying a couple of other bags as well. Lol.

    I tend to put granola in my greek yogurt to give it some crunchy texture. 🙂
