Hi, friend! How are you? I’m doing well. This past weekend was full of work for me (outside of seeing the “Barbie” movie, which I’ll share more about later this week), but that’s okay, because we’re only a week away from our Dominican Republic trip, so I see a break in sight. 

This weekend, I had to prepare a new hour of content to teach in Barbell Strength today and a new hour of content to teach in LifeBarre tomorrow, which was quite the undertaking. I usually try to stagger these programs, so I’m not creating/learning/practicing this much choreography back to back, but that’s just how it happened this time. In addition to that, I filmed some videos for a content project that I’m going to share with you very soon. I also spent some time working on this blog post, and I hope you like it. It’s a simple one, friend.

Today, we’re chatting about food — more specifically — easy weeknight dinners. But before we get started with the meals, let’s cover some basic things about my food and my philosophy for eating:

  • I don’t track my calories or macronutrients, but I know I get enough, because I almost always have great energy, and I feel satisfied after and between my meals and snacks.
  • I don’t avoid any food groups or have a specific diet.
  • I like easy meals, and I’m totally okay with repetition.
  • I like to enjoy every bite, so I only eat foods that I find very tasty.
  • I try to eat about 30 grams of protein at dinner, and I try to consume more than 125+ grams of protein per day. I loosely gauge my daily protein intake, but I don’t officially track it.
  • These dinners have a veggie, a fat and a protein.
  • Most of these dinners are easily assembled and take no more than 25 minutes to prepare.
  • None of these dinners require a recipe.
  • I tend to pick up the same things each week at the grocery store, so we work through a rotation of similar meals. I shop at Trader Joe’s, Sprouts, Whole Foods and Publix, most frequently going to Sprouts.

Also, I think it’s important to note that Dave made most of these meals for me. We have similar tastes and styles when it comes to dinner, so we eat the same thing. You know what’s funny? Long ago, we’d eat separate things every night. It’s nice we eat the same stuff now. He does the cooking, and I do the dishes, and that works for us.

And that’ll do it for easy weeknight dinners. 

As you see, we try to keep it simple, nutritious and colorful during the week — making sure to get in our more fun foods on the weekends. You also see that we repeat a lot of items in our meals, and the portions stay pretty similar. It’s a very easy way to eat healthy, if you ask me. And every weeknight, for dessert, I like to have a couple dates as a sweet bite.
