A full day of lazy eating from the weekend

Hello, my friends! Here we are in the middle of the week. This time last week, I was about to make a failed attempt to fly out of Florida, only to return back to my parents’ house and fly out the next morning. But this week, I’m waking up in the Bay Area well into my usual routine of work.

And to take things back even further, this time last year, Dave and I were on our fabulous adventure in Cabo. But this year, it’s NBA Playoffs time for the Golden State Warriors, and we’re staying put to ride it through to the end, and as you can imagine the excitement is high. Go Dubs!

Believe it or not, I don’t have a lot to ramble on about today, so let’s get straight to the talk about food …

What I Ate Wednesday 

Every single week, I feature one of these “What I Ate Wednesday” posts on A Lady Goes West to give you a glimpse into what a full day of mostly healthy meals look like for me. Some days are better than others, so I try to share a mix of weekday and weekend eating.

What I Ate Wednesday via A Lady Goes

This is a recap of everything I ate on Sunday, which was a pretty lazy day at home with no official workouts. Without any workouts, I don’t have the need for a protein shake, and at times, I’m a little less hungry overall. Here’s how it all went down …

Breakfast at 9:30 a.m.

Healthy breakfast smoothie bowlA late and green start: Not my usual breakfast, but I woke up craving some greens. I had a mug of hot green tea, sweetened with vanilla soy milk and stevia, alongside a green smoothie bowl. This smoothie bowl consisted of frozen spinach, frozen blueberries, half of a frozen banana, vanilla protein powder, cashew milk and some veggie powder, with a few hemp seeds sprinkled on top.

Lunch at 2 p.m.

Small lunch on SundayEasy and tasty: Sometimes lunch-time rolls around and you don’t want to put forth a lot of effort. That’s why this baked sweet potato covered in a massive amount of almond butter and a pulpy can of coconut water had to suffice. This was filling and quite enjoyable, and as usual, I ate it while working on the computer.

Snack at 5 p.m.

Afternoon snack of KitsSnack time: I got a nice little care package from the folks at CLIF recently, and these Kit’s Organic bars are the best. This one has a bit of a kick with that “chili almond” flavoring — the perfect little nibble to hold me over until dinner. I could definitely eat these bars every single day, because they are sweet enough to be a dessert, yet consist of healthy and clean ingredients.

Dinner at 8 p.m.

Turkey burger dinner on SundayGrilled up right: What did Dave and I do before we moved out of the city and got a grill? I guess we made it work, but I’m glad we don’t have to live without a grill in our lives these days, because we use it at least two-to-three times-a-week. Sunday night’s dinner included a grilled turkey burger, topped with cheese and served on a whole-wheat bun with a sliced tomato. In addition to that, we also had a lemon-flavored kale salad and some seaweed salad (well let’s be honest, Dave did not have any seaweed salad). And to close out a nice weekend, my beverage of choice was a glass of cold white wine. Good stuff.

Dessert at 9 p.m.

Healthy dessertA sweet bite: Healthy dessert time! Two coconut-covered dates and two caramel-almond-covered dates, served with a cup of vanilla soy milk. This is a frequent occurrence in our house, and many times I even top the dates with coconut butter or other flavored spreads. 

That’s that for my full day of eats! I missed my usual mid-morning snack, but got a lot of nutrients in during the rest of my meals throughout the day.

Today, I’m teaching BODYATTACK at lunch and a couple of classes at Orangetheory Fitness tonight. Have a great Wednesday, and I’ll meet you back here tomorrow for more.

  1. Sweet potato and almond butter. A favorite good eats! Add a dash of cinnamon for extra yumminess. Easy eats lately is where my menu planning mind is.

    1. Hi Jill! Oh yes, I put cinnamon on my baked sweet potatoes quite frequently. Cinnamon is so useful! And yay for easy eats! That’s the way to go. Have a great Wednesday!

  2. Well that’s a first! I’ve never heard of having sweet potato with almond butter, but it sounds like the complete meal. I guess sweet potato is sweet enough for almond butter. Your smoothie looked delicious 🙂 x

    1. Oh Krissy, You can put just about anything on a baked sweet potato. Cinnamon and almond butter. Bananas and Greek yogurt. It’s link a blank and tasty palate hahah!

  3. This time last year I was heading to Outer Banks, not knowing that Dan was going to propose 🙂 I can’t believe it’s already been a year and we have done NO wedding planning and have no date set yet lol! I am perfectly OK with that!

    1. Hi Courtney! I know, sometimes I crave it cold. But most of the time it’s heated up hehhe. And usually putting it in a mug makes it feel a little bit more “dessert” like! 🙂 Happy Wednesday!

        1. Hhahah oh yes, I do that EVERY night ehhaha You are so right. But on nights when I have a “dessert” I usually put the milk in a mug and heat it up. But I didn’t do either of those things on Sunday and drank it cold from a glass. Nonetheless, you are totally right, this was strange behavior on my part. Too funny that you noticed that!! 🙂

  4. I recently tried those new Kit’s Organic chocolate bars, and I, too, loved them!! Like you said, sweet enough to satisfy my sweet tooth, but I appreciated all the natural and good-for-you ingredients in there. Isn’t having a grill the best?! We use ours quite often too!

  5. Nice solid day of eats, especially the burger! 🙂 The best thing I’ve eaten recently is a tie between a pureed vegetable soup (similar to gazpacho), and gnocchi with pesto.

  6. Seaweed salad? I agree with Dave that it doesn’t sound that appetizing but I’d still try it! 🙂

    We don’t have any trips planned as of yet but I really want to get something in the works soon! I’m hoping to visit Tahoe again over the summer. Have you been yet? It is SO beautiful!

  7. I’m not gonna lie, I treated myself to a McDonald’s hot fudge sundae last night and it hit the spot! I’m also obsessed with frozen mango and smoothies lately , must try it in a bowl!!! Have a great day, sounds like some fun workouts ahead for you!

  8. This time last year, we were just moving back to Boise from Illinois. I can’t believe it’s been a year already. I love Idaho and will be enjoying it to the fullest this weekend with some more backpacking.

  9. I have seen the sweet potato and almond butter everywhere, and I still have yet to try it. I’m just lazy on jumping into trying new foodie things! I <3 cooking and such, but I just procrastinate sometimes, too much.

    1. Hi Emily! I swear I started eating sweet potatoes with nut butter long ago well before it was cool, and well before I blogged hahah! But yes, it’s good, and it’s easy. Hope all is well with you, and don’t be scared to try new foodies things heheh! 🙂 Happy Wednesday!

  10. GO WARRIORS! Being a Bay Area native, it’s definitely exciting to watch the Warriors make it all the way! They’re playing on my birthday next week so I’m hoping my big day will bring them luck!

  11. Hi Ashley! This is my first time visiting. Did you make those dates? They look delicious! And I’m with you on the grilling, girl. I love when it gets warm enough out to grill! I also grill several times a week. It’s just too easy, and it doesn’t make a mess in the kitchen 🙂
