It’s a “What I Ate Wednesday” kind of day

Hello, hello, my friends! Okay, so we’re going to get back to talking about food today, because I took a little diversion with yesterday’s post. In light of that, I’m keeping it short and sweet with my usual “What I Ate Wednesday” recap.

A fun evening of live music before our trip begins

This evening, Dave and I are heading to a concert at a vineyard in Livermore as a very belated anniversary celebration, and then we’ll be up tomorrow by 4 a.m. to get to the airport for our flight to Maui. Even though I’m excited to explore Hawaii for the first time, I’m already getting upset about saying goodbye to our little Rudy pup. Luckily enough, we have a very trustworthy dog-loving friend to care of him, but I’m still sad to leave him behind for a few days. Let’s hope I can keep it together. Now, it’s time to get to the food …

This week’s “What I Ate Wednesday” recap

As a reminder, the point of these weekly food diary posts is nothing more than a chance to see real food in action, so I hope you enjoy them. But remember, what I eat works for me, and it may not work for you. I have no allergies, no dietary restrictions, and I don’t rule out avoid any food groups, so you’ll see a little bit of everything. That’s how I like it.

What I Ate Wednesday via A Lady Goes

Today, I’m sharing everything that I ate on Sunday, which just so happens to be the day-of-the-week I profiled last week as well. This was a rest day for me without exercise, and it featured some good food, prepared both at home and eaten out at a restaurant. Here’s how it all went down …

Breakfast at 8:30 a.m.

What I Ate Wednesday - smoothie breakfastThe only downfall of having a green smoothie-bowl for breakfast is the fact that I have to fight with my Nutribullet. That thing is the worst. Dave thinks I put too much in it each time for it to work properly, but I think it’s just a problem-blender. Back to the smoothie-bowl … this one includes frozen spinach, frozen blueberries, a date, soy milk, chia seeds and vegan protein powder. Not too shabby! I enjoyed it with some hot green tea, sweetened with stevia and soy milk.

Lunch at 12:30 p.m.

What I Ate Wednesday - Lettuce smoked salmon salad for lunchDave and I had plans to do a little shopping in downtown Walnut Creek, so we hit up Lettuce for lunch. It was our first visit to this healthy day-time eatery, and we were pleasantly surprised. I selected the smoked salmon salad, with tomato, capers, red onions, asparagus, butter lettuce and tons of dill vinaigrette dressing. It was seriously delicious, and I finished every last bite. We sat outside and enjoyed the nice weather, which made this dining experience “lunch perfection.”

Afternoon snack at 5 p.m.

What I Ate Wednesday - apple and nut butter snackContinuing on with my recent apple kick, shown here is a sliced-up organic Fuji apple and some almond butter. I dipped these little beauties into the nut butter and also enjoyed a mug of decaf green tea, sweetened with stevia and soy milk.

Dinner at 8 p.m.

What I Ate Wednesday - salmon and broccoli dinnerEating salmon for lunch and dinner? How did I get so lucky on this fine Sunday of eating? If it wasn’t so expensive, I’d eat this every day. To get this meal, we stopped at Lunardi’s Market for some fresh fish and steak on the way home from shopping, and here are the fruits of our labor. Dave grilled this piece of salmon perfectly, and it was super thick. I roasted the broccoli in the oven with coconut oil, as I usually do. For some reason this meal looks small in the picture (a terrible picture, which I’m sorry about), but it was quite filling. And that glass of cold Chardonnay? It was one-of-two for the night, because Sundays need wine!

Dessert at 9 p.m.

What I Ate Wednesday - proyo and date dessertSadly, this was my last high-protein ProYo frozen yogurt bar. These things are hard to find in stores, so I’m hoping I come across them again. I enjoyed this tasty vanilla bean bar with a few coconut-covered and caramel-covered dates, alongside a mug of heated up soy milk. Dave and I are totally obsessed with these dates and go through two cartons-a-week. I wonder if we’ll ever get sick of them? Probably not!

That was all she wrote for eating, and I’d say it was a good day of meals.   1. I just bought a new Ninja blender because my other one kept dying. Even the new one isn’t working well. For a $250 blender, I’m sure not impressed. The big container works well but not the individual ones. I’ll let you know if I find a better one!

    1. That’s so much to spend on a blender, but I wonder if I need to do it. ahahahah stupid blenders 🙂 Thanks for the tip, Megan! Keep me posted if you find something. Perhaps Vitamix?

  2. That is a perfect day of eats in my book. I love salmon (and all seafood!). The best thing I had was some jumbo shrimp I sautéed in white wine and olive oil last night served over pasta with parsley and lemon. It was great! Thanks for always showing a good healthy balance of eats and a few treats!

    1. Hi Mo! Thanks for that! I couldn’t live without the treats and wine, that’s for sure. And shrimp sautéed in white wine sounds divine! I’ve ordered dishes like that quite a bit but never cooked it. Nice work! Have a fabulous Wednesday! And you know I’ll be eating ALL the seafood in Hawaii heheh!

  3. Looks delish! You NEED a Vitamix – it’s a little expensive but so worth it!! My week is going great! I’ve been subbing lots of classes and loving every minute! One more today at noon and that’s it until I get back from Chicago for One Live!!!! Have fun in Hawaii – such a great place! Don’t worry about Rudy – he’ll be fine! And, he will be SO happy to see you when you get back!

      1. I sure will be posting lots of pictures – I hope to see lots of Hawaii pictures too! Yes! I am fully healed, thank you for asking. It’s normal for me to still have blurry vision sometimes and I do, but it’s getting much better! It’s so nice to not worry about contacts/glasses anymore!

    1. Yes, ma’am! I just emailed you a terrible picture, but you’ll get the gist. Look for them in the produce section in clear packages under the apples. SO GOOD! 🙂

  5. Really need to find some ProYo frozen yogurt bars at my grocery store.. they look absolutely delicious 🙂 Best thing I ate had to be the acai bowls! Have such an amazing time in Hawaii… can’t wait to see all the gorgeous beaches! 🙂

    brown rice cakes with almond butter and sliced banana is my obsession right now!

    Have the best time ever in Hawaii. Looking forward to your tips. Ive been wanting to go there for forever. Yummy Acai bowls and tons of pineapple coming your way!

    And leaving your baby for the first time is the hardest!!!!!

    1. Hi Sabrina! Oh my gosh, true story: I had brown rice cakes with almond butter and sliced-up banana for dinner last night. Hahaha Not the most glamorous dinner, but totally tasty. I love that combo, and it’s fairly new to me. As far as the Vitamix, yes, I guess I should look into that – because the warranty would be good. I seem to ruin all blenders hahaha. And I will have a full Maui Travel Guide ready for you soon after my trip, don’t you worry! Happy Wednesday! 🙂

  7. Ohh I need a new blender so badly! I’ve had mine for far too long and it takes forever for everything to get ‘smooth!’ lol Probably the best thing I’ve eaten lately is corn…I didn’t get on the corn train early enough this year and man it’s sooo good!!! That to me is one of the things I miss most when summer is over! Have an amazing trip!!! Rudy will love you EVEN more when you get home…

  8. I literally have a budding romantic relationship with salmon- I cannot get enough! It tastes incredible with everything no matter if it is baked, smoked, raw, etc. I hope you have a fantastic time in Hawaii- do not forget to hula dance ;).

  9. Safe travels to Hawaii!! I always have a hard time saying goodbye to our dog when we travel but knowing she’s in good hands makes it a lot easier. And, it gives me something to look forward to once the trip is over and I’m on my way home. I love how excited she gets when she sees us 🙂

  10. Oh, I do love smoked salmon! And you were lucky to have salmon twice in one day! You know, I am usually a red wine kind of girl, but lately I have really been digging Pinot Grigio. I hope you guys have an amazing time!!

  11. I’m jealous of all your salmon! Now that the school year has started again and I’m living in the dorms I think it will be a while before I have salmon again. Actually, as I’m typing this I was just thinking I should cook salmon for me and my roomies since we do have a full kitchen in our dorm. Thanks for the inspiration, and I can’t wait to hear all about Hawaii!

    That Lettuce restaurant looks so good! We gotta get one of those in Toronto. The best thing I had this week was a massive margarita pizza today. Thin crust and overloaded with tomatoes and basil. mmm!

  13. I used to see your pictures of those dates and seriously lust over them – dates are my favourite food ever!
    Then 2 weeks ago I moved from the UK to Australia and guess what Aus has! Yup pretty much identical to your dates! Our ones are either covered in chopped coconut, pistachios or almonds and are amazing!!! So happy!

    1. Hi Sue … yes, I think you said that on my last WIAW post as well. 🙂 As you see, rest-day eating is sometimes different than active-day eating. But don’t worry, I keep plenty full. Especially on my trip to Hawaii. Hope you’re having a great week!
