A much-needed day of healthy food and drink
Hello, my friends! I’m coming at you today with a standard “What I Ate Wednesday” post. It feels good to be back on my regularly scheduled programming here on the blog after a few diversions due to travel. What’s not regular? The fact that my little Rudy is having surgery today. He is getting some baby teeth extracted as well as getting neutered. Think some good thoughts for Rudy, please! And honestly, there’s not much else to report from us, so let’s get straight to the food.
This week’s “What I Ate Wednesday” recap
I don’t know about you, but I love to look at food. I also love to look at real food pictures to see what people eat on a daily basis. If you’re reading this post, you likely feel the same way. But remember, my meals are good for me and these eating recaps are nothing more than entertainment.
Today, I’m sharing everything that I ate on Monday. This was an interesting day, because I woke up in Columbus, Ohio, flew back to the Bay Area, unpacked, napped, worked on the computer, went to the grocery store and even taught an evening group fitness class.
Breakfast at 5 a.m.

Mid-morning snack at 11 a.m.

Lunch at 1 p.m.

Afternoon snack at 4:30 p.m.

Pre- and post-workout beverages

Dinner at 8:30 p.m.

It felt so good to eat normal healthy meals on Monday, as well as yesterday. My weekend was less-than-healthy, as they have been lately with all of my trips and events, so sometimes I look forward to the regular old foods that fill me up without a lot of extras. That’s that! Isn’t it crazy how a few days off schedule with food you typically don’t eat and you just can’t wait to get back on track? I always feel like that after a vacation. This morning I had a piece of pumpkin bread and tea for breakfast, but I’m meeting up with some friends for a real breakfast. I just needed something to tide me over 😉

I feel exactly the same way after a weekend of eats! I love getting back into my routine and feeling “detoxed” 🙂 I need to try your sweet potato & egg combo, looks tasty!! Oh and that chia drink, YUM! Definitely need to get my hands on one of those 😀

Your dinner is one that I’m obsessed with myself lately. I am loving simple turkey burgers with some avocado and mixed salads on the side.
Yes! It’s a staple meal in our house, Stacie. Once a week for sure!
That kale salad looks really great! I need to get some of that 🙂 This morning I had all the pumpkin foods- pumpkin yogurt and pumpkin coffee. It’s fall now, so why not! Good luck to Rudy! I’m sure he’ll do great 🙂

For breakfast today I enjoyed baked oatmeal … I’m working from home today so I decided to take a bit longer to prepare breakfast and I wanted something different than my usual weekday choices.
I’m like you in that I love being away on vacation and treating myself. But it always feels so good to get back o a routine and enjoying your usual healthy food choices.

I had a bowl of oatmeal with a big scoop of peanut butter, cocoa powder, chia seeds, and honey- every day :), with a side of tea.

Ohhhh thanks, Jacquelyn! I’m glad you enjoy these posts. We buy the salad from Safeway each week, it’s a bagged mixed kale salad with dressing, usually over where they sell the spinach. SO GOOD! 🙂

I always love coming home after a trip! I had Arman @ The Big Man’s World’s Tiramisu Rice Pudding for breakfast. It was pretty tasty. 😉

Poor little Rudy! In sure he’ll be a champ and get back to his normal self in no time 🙂 And for breakfast today, I had PB toast and a banana. It’s my go-to when I can’t decide!

I have been loving sweet potatoes and eggs lately too! One of my favorite combos too! Airport days are always to worst for food, but good choice! Especially the addition of the green tea! I love waking up to a cup too!

This looks like a picture perfect day of healthy eats! I could use a day like that sometime in the near future, haha. I especially love the simplicity of the eggs and potato meal, though I would probably add hot sauce just for fun! Great post.

Sending love to sweet Rudy. Am severely hypoglycemia patient so have to do soy patties eggs and one piece diabetic bread with unsweetened soy milk every day or I collapse for breakfast. Wish I could eat the sweet potato but it’s packed with sugar. Sigh. Not able to take any trips this year so enjoyed seeing your fabulous travel.

I literally haven’t had a burger in SO long – now you’ve got me craving one! And that cliff bar/banana combo totally threw me back into my high school soccer playing days. Those were my in between game time snacks during the weekends I played tournaments!

I am loving to see that 8:30 is someone else dinner time as well. I teach Piyo classes on Tuesday nights and don’t get home to have dinner till later! Love the day of eats lady!
